The holidays are in full swing so get your tastebuds in high gear because this parfait doubles as a breakfast and a dessert. I have been on a parfait kick lately, holiday style, for breakfast that hit the spot ever-so sweetly I just had to share. What exactly makes it Holiday style? Cinnamon, apples with a hint of vanilla and I am in heaven. Continue to hear me dish on all the goods.
- Granulated Sugar
- Greek Yogurt (2 cups)
- Plain Rolled Oats
- Coconut Oil
Makes 4 parfaits
Ingredients for the OAT CRUMBLE:
- 1 teaspoon of Ground Cinnamon
- 1 1/2 teaspoons of granulated sugar
- 1 cup of rolled oats
- 1 1/2 teaspoons of melted Coconut Oil
Directions for the OAT CRUMBLE:
- Preheat your over to 350 degrees.
- Mix all ingredients in a bowl.
- Evenly spread the contents of the bowl onto a baking sheet and bake until golden brown, about 7-10 minutes.
- Set aside to cool.
Directions for the QUINOA:
1 cup of quinoa with 2 cups of water. Place pot on low heat, half-cover and wait until there is no more water. Once cooked, add 1 1/2 teaspoons of cinnamon to the quinoa and mix well. Set aside to cool.
Ingredients for the APPLE COMPOTE:
- 1 cup of water
- 1 tablespoon of granulated sugar
- 1 teaspoon of vanilla
- 1 teaspoon of cinnamon
- 2 apples (*peeled, cored, coarsely chopped)
Directions for the APPLE COMPOTE:
In a medium saucepan over medium heat, combine all ingredients, mixing well. Bring to a boil and reduce heat to low. Partially cover and cook until apples are softened and liquid is syrupy, about 10 minutes. Add more water if needed in the cooking process. Take off heat and let cool completely. Cover and refrigerate for at least 1 hour.
Spoon 1/4 cup yogurt in bottom of glass, 1/4 cup quinoa, 1/4 cup cinnamon apple parfait. Repeat the layering and top with oat crumble. Repeat with remaining glasses.
If making a dessert parfait, top with fresh whipped cream.
